When Erik told me that his friend swore that you could eat sturgeon gizzards and that it was just like abalone,  I was sceptacle, but, I'm always willing to try new delicacies.  So took home that gizzard from Josh's sturgeon and did what Erik suggested -- I sliced some thinly, pounded it, seasoned it, and fried it.   It was excellent :smt110
The texture was just like abalone and almost as good!

Tonight, I BBQ'd more of the sturgeon which I first marinated in Italian dressing.  It was like eating an awesome pork chop.  My wife really enjoyed dinner. :smt047

I'm really impressed with the quality of sturgeon meat.  I can't wait to catch one of my own.  Now, I'm on a mission :fish4

I wish we had a picture of that thing for the board.  I was surprised at how much meat there was in that thing.  

I'll have to remember to pull that thing out of the next one... sturgeon gizzards... who'da thunk!

There's a difference between something that's breaded and fried and something that's raw and put through a blender...

Like I said, fear factor would be more like beer bonging the intestine contents than eating a nicely cooked gizzard.

my favorite is sturgeon parmesan, just like chicken, but only cook it 1/2 the amount of time a piece of chicken requires.

Seems you could cook alot of chicken recipies with sturgeon.  Imagine sturgeon kiev!
