The Mini-X is a good option
That doesn't track well either.  Maybe check out a Ocean Kayak Trident/Prowler 13, or even an 11?
True, but beggars can't be choosers...  :smt003  And it would seem to fit the bill of under 50lbs and under $350.
But at your size, I would also recommend the Scrambler XT; lightweight and paddles decently. I've owned a few and my main complaint was my butt barely fit the seat area.

X 100.

Sooo uncomfy if you have a larger butt like some of us...

Definitely worth demoing before you pull the trigger!

There are some very nice inflatable kayaks out there.  Look at the Sea Eagle Fasttrack as an example.  www.seaeagle.com  I plan to get the 15 foot 465 Fasttrack. so that I can do spontaneous kayaking with the family.  Can seat 3 paddlers, you can mount a motor to it, and you can fish from it.
Eddyline C-135 on its way (Yellow top/Grey Bottom), now named the "YukAttack."
