I've built a few boats from scratch.  A lot of rewarding work.  Another good source for plans is Clark-Craft and Glen-L Marine Designs.

I to have participated in a few builds. Have checked Clark Craft and Glen L.
Bateau's construction method is what sets them apart.
Epoxy encapsulated composite "eggcrate". Makes for a strong light craft. With their skiffs ths makes for a light economical, yet somewhat "bouncy in the chop" craft. Great construction method for a yak imo.
I own a set of plans for their C21 and am thinking of getting plans for their Fast Skiff 17.
I think the weight of this diy yak is appealing.
