I'd check a thrift store too if you have a chance.  I have found a few nice $20-$40 knives (Victorinox, F.Dick, Dexters, Etc.) at my local shop for $1.

Dexter softgrip 9": good flex and nice narrow blade that I like. I have to sharpen it often and I wish the tip had a bit more curve

Bubba Blade 9: I was just given one for christmas. Sharp as hell and good curvature at the tip, but the wide blade will take some getting used to. I think I like it though

Another vote for Dexter brand filet knives (just pick the one that suits your needs)... I also really like my Dexter “Cut and Gut” knife for bleeding and gutting fish on the water. It’s got the spoon on one end for removing blood lines from salmon and trout.

Kershaw also makes a pretty good filet knife, but the blade is pretty stiff so it might not be exactly what you’re looking for. (At least the one I have is stiff... maybe they have other offerings.)
