Both cuts are really good for nice and slow slow or fast/seared types of cooking.  Skirt steak usually has less connective tissues than Flank. They are both usually cheap, good for steak tacos, fajitas or london broil types of applications.

You also need to cut the steak properly, or you will just have chewy chewy bits of meat!

Optio W80, 150$ or less, and you will LOVE it!  I have a Stylus 1030SW, a tough camera, but I dont like its pictures nearly as much, and cost me twice the W80!  Just dont drop it  :smt005

Elsewhere on the wharf folks are catching some sardines end to end, quite a few shiners coming up, and we’ve seen some pretty decent sized walleyes. Folks are working on that evening striper bite right now.

Away from the wharf, bait is in the marina from the outer edge all the way into the beach. It’s not thick but it’s all over the place.

Also of interest, Kurtis said he saw a 12-14 foot great white shark cruising around in 30 feet of water off New Brighton beach today.
