Guys that Shimano TR100 G is a sweet reel and will do you well!  I have one set up with the same handle and have smoothies with Cal's Grease in it.  For the money this is a good set up.  The Penn Jigmaster has tons of potential to do what ever you want shy of big blue fins. Tons of upgrades out there for Jiggy.

I wish I lived closer, of all the Hobies the 16 foot one was the one I always had eyes on.  I tested one at a HoW event many years ago, (It was at Kelsey Bass Ranch, and I brought the VA mobile Medical Unit out there) it was rocket compared to everything else on the water. I doubt NCKA delivery come up to WA state.

There is a huge following for these old penn reels. I went down the rabbit hole a while back and upgraded both the penn 500's that I run for sturgeon and yellowtail. You can get these things to work butter smooth, swap out the drags, replace with custom cut stainless parts, you name it.

If you got time check out alan tani's site ( i think he was from san jose but people all over the globe frequent the site). Tutorials, vids, parts, upgrades, repairs, etc

I am going to Second the Alan Tani referral.  Take that old green one, find one of Alan's tutorials and take it apart clean it, lube it, and then set it aside. The greenies are not common and if you should damage a side plate you will play hell finding a replacement. The red one you could fish if you want to.  Restore and hot rodding Penn's gets expensive fast, you can sink some heavy money in them.  I know I have done a few.

Update to this, look at some of the PNW Setups for trolling, 10-20 once weights on the mainline just above the flasher.  No release.  Simple an effective, weight varries on conditions depth and current.

See the rigging thread, I have pictures on installing the kick up rudder.  If at all possible make a second one of those "arms" used for the rudder cable, and then run it on top of the regular arm, but in the opposite direction, this will give you you more pull when turning.  I saw an image from a guy in South Africa who does that, and it made since to me.  I don't have an image here, maybe at home.

I did, and am still troubleshooting somethings. Initially I used heavy cord I had used on a Hobie rudder, and it didn't last one season ( I had over 8 years on the Hobie with it, without issue). I am in the process of converting to wire all the way through. Pro's and con's: pro no more dragging that rudder on the ground, con, you lose maneuverability, so you have to plan your turns earlier.  I have a Fisha 555, I am over 18 feet in length, so I went with the larger "hybrid" rudder.  Without a rudder the yak doesn't track well (tried it failed for me).

There is guy on Youtube who salmon fishes off the WA coast in a sit in, he uses these fish looking weights that get him down to where he wants to be.  Honestly I don't see the need for a down rigger on a stealth, but that is my humble opinion.

Yeah I used to think the same thing, don't do it.  Fishing restrictions are worse here in WA, I can't say for BC.

Yeah, seems some time ago, some  commissioner allowed trawlers into the sound, guess what happened tot he rockfish?  Didn't take long for that to turn into a Goat Screw.  So we have a small Ling window (about a month), 1 cabezon, no rock fish, hali are are offshore only if I recall, and that is a small window as well. Salmon vary by whats out there, the tribes, the commercial guys, and sportsmen/women.  Tribes get 50%.

Anchovy is spot on. Cals grease can be used for your whole reel if needed.  Check out Alantani.com  for your specific reel. Odds are others have had this issue as well.
