Those bat rays sure put up a good fight. Have you ever eaten one?

I caught and ate a skate 35 years ago but can't remember how it was prepared.

I have also had it at Emeril's Fish House in the MGM Grand in Vegas. It was actually pretty good. I guess it depends on how you cook them.

Bat rays can't be that bad tasting and I'm sure someone on here has had them before.

I have.  It is delicious.  It's called poor mans brisket in virgina.  The meat is striated like skirt steak.  After bleeding by cutting out the gill box, there are 4 fillets from the top and bottom of the flaps.  Start filleting at the top of the flap and work towards the tip, then flip fillet and slice meat off skin like a fish.  The meat is a dark red.  I will soak it in salted fresh water for a couple rounds then dry and season then saute'.  I also have a curry recipe and my chef friend prepares it confit style and it is like pulled pork.  The meat turns white from red after sauteing.  :smt006

Loon lake Chalet is available for rent at $100/night and sleeps 20 people.   The only downside is you have to rent it 6 months in advance to get a spot.   I've got it reserved for a snow wheeling jeep trip on April 15th   :smt003
