Adventure 16 now Revo 16 should fit the bill for what you seem to have in mind. Fastest stock Hobie, Very stable for ocean fishing. Handles swell,chop,and wind nicely. Used Adventures are around for reasonable prices.

I've got a 2014 AI and before that, I used a 2013 Adventure for a couple years. The big change was in the 2015, where they converted to the lawn chair style seat and rechristened the Adventure as the Revo 16. If you don't need the fancy seat, you can probably save a ton of money by getting an (older) Adventure, as opposed to a (newer) Revo 16.

It's a great kayak, and with your background I'm sure it'll be plenty stable. I had my Adventure in some pretty rough conditions and never tipped over, outside of surf launch/landings.

Come to think of it, I've still got my 2013 Adventure, and don't use it, so I probably should sell it.... Naaaaaahhh! (said in my best Theodoric of York, Medieval Barber impersonation).

You should be able to get a good quality used pre-2015 AI for less than a new Revo 16, so definitely something to consider...

You can put any seat you want on an older AI, as stability is not an issue. So, it's easy to raise the seat and avoid a wet butt, if that's what you want to do...

Yeh just save up and go with an AI. It’s like a Revo 16 and outback stable combined. And you get the extras like sail and AMAs.
Same here I’m selling my 2013 Adventure for I don’t know maybe a 2020 Revo 13

Yes, it would be roomy enough for someone 6’3” tall. By IT, I mean the 2015+ Revo 16 or the pre-2015 Adventure. They are very similar, but in 2015 they added the fancy seat and made some adjustments to the deck & topside (including those handy thru-hull wire plugs and transducer shield). The Revo 16 is also heavier though.
Yes, the turbo fins & sailing rudder are pretty much mandatory.
As far as outiftting it for fishing, you don’t have to do much. I would suggest a Scotty side/deck mount inside the mesh side pocket for a rod holder, then attach your FF to the sail mast using the Ram ball setup...and run the wires thru the hull.

I’d second most of that. The only place I’d differ is that I’d recommend the  Railblaza “sideport” mounts inside the mesh pockets—they are also easily modified to fit in the water bottle holders.

For one thing, they are a lot lighter and smaller, with no loss in strength (as far as I can tell). For another, Railblaza mounts lock in place—I sometimes have problems with the Scotty mounts slipping. Also, no big hole to drill for their flush mounts, and they have some mounts that fit AI aka bars. The down side is that they are not cheap, and Railblaza is incompatible with any other system.
