i generally go to my right if i'm lipping/gaffing/gripping fish. im very right hand dominant so its difficult for me to aim when trying to grab a fish on my left.  if i'm netting it, i'll take it wherever the heck the fish ends up, but i still hold my net with my right hand.

This is me!   :smt003

Depends on the fish and what is doing.  I tend to fish to my left, but I try to keep my center of mass center of the boat and not over extend.  Bring the fish as close as possible to the boat, and use a net, gaff, or lip gripper, or in the case of smaller fish, flip it in the boat.

I'm a righty, land lefty.  With landing tool in left hand, pole in right.  Be nice to have a third hand to turn the crank, but I make do by getting the fish fairly close and then getting it to the edge of the yak by lifting the tip of the pole and swinging it to the right. That way, my right arm is balancing out my left arm and the fish.  But I probably couldn't do it another way now even if I was convinced it was better.
But I'll bet it's just a matter of getting some more experience, regardless of which hands you use.  Unless you have a really tippy kayak, after a while it will be hard to make the yak tip over even when you want it to.
