This may be a little off topic, but the vermillion sashimi discussion made me curious on abalone sashimi.
I eat most of my abalone pounded and fried. But occasionally I do slice a few pieces of sashimi (without freezing the abalone). Does Abalone carry parasites? I've never seen one, but I want to see if you guys saw any and if there is any potential danger of that.

I haven't heard of any parasites.
We also love to use abalone in sashimi and sushi
My local sushi guy just recomended steaming the abalone in saki then using it for sushi.
one of our favorite tricks is to fry a steak fry size piece of ab and use that in the center of a sushi roll fantastic.

Here's what we had for Dinner last year at Still Water North.....we ate raw oysters first and used the shells to "house" the Uni (raw sea urchin) while we pounded fresh abs to complete the "ultimate sushi platter" :fat

I tried uni years ago in a sushi restaraunt and I thought it was terrible then I tried it again last year right out of the urchin, much better a nice appitizer served on a cracker or toast point.
I like your use of the oyster shells.
