Well, I got a shit ton of it if anyone wants to get artsy.  The plot I want dug up is fairly full.

And if anyone wants some bamboo shoots (to eat!), now is the season as the shoots are starting to come up.

Come hack it up this weekend if you want!

They are just starting, as a week ago I didn't see any.  Yesterday there were a number that were already 3' tall.  This stuff grows fast.  I should see new shoots coming up over the next 2-3 weeks.

Bamboo shoots are tasty.  Make sure you get the one that don't have lot of green to them. Sharp knife score the outer layers, rip off the fibrous material.  Soak in cold water overnight.  Slice it,  use in stir fry.

Hey Ben,  I'll get back to you once I talk to the pros.  I'm not necessarily looking to save a big chunk over that.  I'm certainly willing to pay market rate, especially if the alternative is using HD labor or college kids who are just as likely to put a pickax into my wall or tear down my fence.  But I wanted to see if an NCKA'er like you would rather take my money than forking it over to the guys that sold me this mess to begin with.

I actually removed all of the bamboo from 2 different plots in my backyard last month. It wasn't THAT hard. It took my wife & I two days, maybe 15hrs each, and 2 dump runs with my truck. The 2 plots were only about 20ft apart and definitely interconnected by roots underground (cement in between). So I have a feeling the remaining roots could reemerge again; it's always popping up in nearby areas anyways. But I am going to simply cement the open/empty plots where they used to live...
