I could not imagine trying to stand up on a kayak. I have a hard enough time getting off the floor from a seated position.
Fly fishing from a seated position is easy enough. At 6'6 you are sight fishing just as well from a seated position as some that would be standing. 
As far as the drive getting in the way; a little getting used to and you won't even know it is there.
I paddled for a decade before I got a Hobie in 2009. Won't go back to paddling if I don't have to.

When our neighbors are on vacation they seem to know it

I wonder if those neighbors put in a 'vacation hold' at their Post Office and if they are all serviced by the same Post office?
That would be one way of explaining how they know people are on vacation.
