Hello NCKA Friends!

I was recently asked to help connect one of our spearfishing sponsors with a pro-level angler that is very familiar Northern Baja / Southern California freshwater fishing areas. I believe they are interested in doing a promo video with some of their new product line. They have a pro-staffer that will join as well but they more or less need a "guide" to a picturesque location that is kayak/SUP hook and line fishing friendly.

I figure you guys would definitely know of someone.

I’ll show this to my son who has a casual cooking competition going with his Italian buddy who’s a gifted chef at age 14. Mostly about the eating for them but maybe we can up the style factor Did you do culinary academy or just doing your own inventions?

Anyway very nice looking food there Would like the recipe for tortillas if you’re willing

About soda, hydration with a sugar boost if you’re caught in gusty winds ain’t a bad thing

Hey man! Thanks for the kind words. The coca cola safety gear is hilarious.

I actually founded a catch and cook comp last year that was fairly successful (38 competitors and a pro chef judge panel). Maybe your son would dig it! We're just getting the gears greased for the next one mid 2020 which is likely going to be virtual (I think we can make it work).

I found a passion for cooking about a year and a half or so ago and just been playing in my tiny apartment kitchen ever since. Slowly accumulating more culinary toys and gear. I'm very jealous of nice kitchens now... or even kitchens that have space for a cutting board ha!

A lot of the recipes can be found on our F+F website https://finandforage.com/food but unfortunately I haven't written one up for that meal. I'll make it a priority to do so and get back to you!

Nice project, I've been thinking about doing this for years.

Was gifted some "fancy" artisanal smoked sea salt a few years ago and it was awesome on steak/burgers/meat.  Might try to replicate that stuff.

We did a few combos, one of them was smoked paprika and chili. I'm really looking forward to trying habenero and mango. My fav so far is basically italian herbs with garlic, dried, blended and mixed into salt

Also, Eddie that rootbeer sounds like a delicious concoction already. I hope it's able to carbonate adequately downstream
Yes, that’s the big hope!  I did not off gas my raspberry lime ginger ale and lost so much per bottle at opening, maybe 2/3 per bottle... :smt006

I hear ya’, whenever I get off the saltwater I have a sugar carbonated craving and I found myself drawn to a ginger ale to calm the transition from water bobbing to land, regarding the tummy.  Hence, make your own, which is better.  I can control the sugar in the recipe.  Don’t need it super sweet... :smt006

Yeah, the sugar is what I'm not a fan of. I do like fever tree ginger beer.

We then make a bullet with the body and wrap in towels for a couple days on ice to rest and “cure” so to speak...can go as long as two weeks in this procedure changing out the towels or replacing the paper towels... :smt006

Sounds like a really quality meat you did up! Do you dry age after the initial "cure"?

Super fun family project. Making sea salt!

We recently took Squigs on our regular tidepool walks but this time brought some jugs to collect sea water. It took all day to make the salt, but was really easy and definitely a great time! For every gallon of water, you get about 1/2 cup of salt and then can flavor it will all kinds of fun combos.

Haven't been on NCKA in a bit, so here is a little covid catch up on playing around in the kitchen!

1 - Lobster Miso Soup
2 - Lobster Spring Roll on homemade Kelp dish
3 - Scallop, sweet shrimp and chorizo corn chowder
4 - Seafood foraging platter
5 - Tom Kha soup with fish and crispy rice
6 - Bonito and mango Mosaic Sushi
7 - Seared Bonito in tomatillo salsa with Homemade Flower Tortillas

Seafood is fun and been learning a lot about cooking thanks to the shelter in place time.

I normally cut the gills of my fish to bleed them over the side of the yak after bonking their heads. A habit I picked up when catching stripers at the delta. My last trip to Rockaway, I caught my limit of browns and bled each fish after they were caught. I was told later that doing this would be ringing the dinner bell for mr. great white to show up. Didnt occur to me til after I was on shore due to sleep deprivation the night before.

Has anyone had any close encounters because of bleeding fish out in the deep blue?

I don't hook and line, just spearfish, but I always bleed my fish. I haven't had any shark issues while bleeding, more just hunting.

I'm not 100% on this, but I was told it is most effective to cut the tissue behind the gills, rather than the gills themselves.

From a meat quality point of view, if you have the time/desire, ike jime (brain, bleed, destroy spinal column, bury in ice) is really really effective in ensuring your fish meat is top quality.

Do you do the pool noodle thing in case you take on water?

In my old blue T15 I did...last several yaks I haven't...prolly cuz I was getting new yaks and selling old ones pretty frequently for a few years and was too lazy to get new pool noodles and put them in...think my original noodles went with T15 to reelcrazy831 Patt S.  :smt005

I do keep a bilge pump lashed to a scupper column and tucked between column and side of hull...

As long as you can easily access bilge pump and can use it to pump out water I think you should be ok...you are already dressed for immersion and swimming...

But noodles will for sure increase chances you can paddle back to launch in case of a massive flooding issue...

Pad Krapow Gai with Crispy Rice, Mango Mint Salad and Spicy Garlic Edamame

2 tablespoons sesame or peanut oil
1 pound ground chicken
black pepper
6 cloves garlic, minced or grated
1 inch fresh ginger, grated
2 red or orange bell peppers, chopped
1/2 cup raw cashews
1/4 cup low sodium soy sauce or tamari
2 tablespoons fish sauce
1/4 cup honey
2-3 tablespoons chili paste (sambal oelek)
1 cup fresh basil, roughly torn
1 can water chestnut
1/4 cup fresh mint, roughly torn
steamed white or brown rice, for serving
1 mango, thinly sliced or diced

Heat the oil in a large skillet over medium heat. When the oil shimmers, add the chicken. Season with black pepper and brown all over, breaking the chicken up as it cooks, about 5 minutes. Add the garlic, ginger, peppers, and cashews, cook another 2-3 minutes, until the garlic is fragrant. Pour in the soy sauce, fish sauce, chili paste, and honey. Bring the sauce to a boil over medium-high heat and cook until the sauce coats the chicken, about 5-8 minutes.
Remove from the heat and stir in the basil and mint.
Serve the chicken and sauce over bowls of rice. Top with mangos, mint and additional basil.

1 bag edamame, thawed to room temperature
6 cloves garlic rough chopped
Sesame Oil
Crushed red pepper
Chili powder
Thai Chilis, thin sliced rounds

Heat oil over medium high. Add the edamame and allow to blister/burn the shells. You may need to add more oil during cooking. Shortly after adding edamame, add the garlic and mix. Once finished, remove from heat, add all the other ingredients and mix well.

I would keep it as simple and clean as possible...less junk the better.

Clean, empty deck for getting off and on with minimal wetsuit snagging possibilities...

Clean, empty tank well for fish/guns.

Clean, empty inside hull for fish/guns/gear.

A set up for kelp clip/anchor/bowline, and somewhere to clip off a stringer is all I think you really need...
