true, the restaurant has never asked me to identify the fish for them either.  So I assume its generic fish

Sorry you are offended,
This community is made up of fisherman that respect our surroundings. When I see a pick of a fresh fish, still in the water, it is assumed a fresh catch (poss a bad assumption). Than an open question about identification. Than a half explanation about fish .....
Maybe I was a little quick on the draw, but you left a lot open for a very bad interpretation

seems reasonable to me...mean replies will also shorten this fun and informational post/thread...poor guy did not mean to be sneaky or criminal or would not have posted up imo...better pics next time for sure...I have often spoken  to folks otw who kayak a lot ,and lurk on this site, and they have said more often than not that folks on nor cal can be kind of---well---kind of---forget it...I got no doggy in this one

Damn, what a cliffhanger!  Photos that barely allow for an ID, followed by an unexpected story of buying an unknown fish from a mysterious merchant who specializes in selling live fish.  Somehow this reminds me of the movie Gremlins, with the dad buying the Mogwai/Gizmo from the mysterious Asian merchant  :smt044.

I'm still groovy with a sablefish ID, but certainly not 100%.  Bluestar, I hope you come back because your story has me hooked!

Sablefish are GREAT eating. And I believe they catch them by trap, making by-catch minimal, so it's a good fish to buy in terms of sustainability. They're deep-dwellers, though, so catching with rod and reel is difficult/impossible.

Sable fish AKA black cod are commercially caught by long lining. They have a very high fat content
My father was asked by a friend to smoke some black cod that he brought back from Alaska. There is so much fat in the flesh that fish oil dripped to the bottom of the smoker, filledup the pan and spilled outside the smoker.  The smoked cod finished up being about a third of its original size. The smoker clean up was long and smelly and my father promised to never smoke that stuff again

I was given some by my nephew early this year that he took part in catching long line as a deck hand.
It was so so imo...very slippery and cooked up kind of bland..
I thought by how white and soft it was that it was going to be VERY good-it was okay is all
