I was just down getting some smoked piggie bits for various recipes at the Corralitos meat market (near Aptos/Watsonville).  Apparently they'll smoke fish for you if you bring it in.

I wonder, have any of you tried them for smoking a fish?  I'm hoping for at least one salmon this year and I'd love to have them smoke it for me...
