Anyone have a good recipe for salmon head? I always just bake them mainly for the cheeks but I know there has to be a good soup recipe

I don't have a recipe off-hand, but what I do is take the bones and head and either  bake them or microwave them enough to barely cook them. Then I make a dill, corn, salmon chowder and flake the salmon meat in right at the end.  It's surprising how much meat you get, even when you do a nice job of filleting the fish.

A typical corn chowder is fast and easy to make, around 20 minutes.

Pick up some tamarin soup base from an asian market, most albertsons and safeways have then also.
Follow the directions for how much base to put in the water. Then add a pinch of rice, for body. Then add your chopped up fish heads (i prefer lingcod, striper heads). Bring to boil, then lower heat to simmer for about 30 minutes. Then add one single stalk of lemon grass(smashed), garlic, some lime leaves, salt to taste(or fish sauce)...
On the side cut up some lime wedges and cut basil leaves to add to single serving of soup. Don't forget the chili peppers.
This is a slight version of Sinagaw(?) a Philippino dish.

This is my favorite fish head recipe...works with any kind of fish including salmon.

1) Tie or clip one large fish head to inside of crab trap.
2) Soak in saltwater between several hours to overnight
3) Discard remains of fish head and keep dungeness crabs
4) You just turned a fish head into a gourmet dinner!

Did you know that the ear bones of vermillion rockfish make good earings?????............ :smt017  I've had an offer of a lesson for removing this pelagic jewelry.  More to follow I am sure.

The otoliths of many rockfish are ornate and "pretty".  I havent dug through a head to retrieve them in quite a while, but maybe I'll do the same for Leah.  She loves to make jewlery.
