I ended up with some striper fillets after fishing in the delta.  My 10 y.o. foodie son wanted to turn them into tacos.
We marinated the fillets with
One bunch of cilantro leaves
Juice of 3 limes
3 Cloves of garlic
We blended the above with a little EVOO and placed the fish to soak.

We pickled a medium sliced red onion in apple cider vinegar with a couple tablespoons of brown sugar

He also made a sour cream with a second batch the above marinade mixed into sour cream.
