Finally got some consecutive hot days lately and now putting my homemade drying rack to the test.  Dying winter caught herrings and smaller perchs

I was thinking about using a corrugated panel to catch the drips and also to get more heat going  under the rack to sperd up the process.  I used 1/2" wire mesh outside and aluminum window screen to keep the flies n critters out.

I just use a regular dehydrator.  I brined for a few hours.  Then I ran at low heat, like 130 degrees, for 2-3 hours in the morning.  Then on air only for the rest of the day.  Then opened up the dehydrator and let it sit overnight.  Repeat for 3 days total.  This kind of mimicked the natural cycle of sun drying.

It turned out pretty good.

Just last night, I made up some "Gourmet Tuyo".  I lightly fried the dried herring, then pickled in oil, vinegar, garlic, and chili peppers.  Oh so good!

I've been looking up how to make " gourmet tuyo" online but wasn't sure if it's fried first or just dried then jarred and put in a pressure cooker.

I used equal parts vege oil, olive oil, and vinegar per one of the many recipes on the web.  These did not go through the pressure cooker or water bath.  They will be gone in a month anyways!
