In your recipe you use cherry for the 1st 2 pans, what're you using for the rest of the smoking?


I usually stick to applewood, I remember trying one of the others and had a metallic taste.


I have a batch going with your recipe right now.

Nothing.  2 pans is enough.  Any more and the smoke will over power fish.  The rest of the smoking process is for cooking/drying.  I didn't even do the honey glaze on my last two batches and they still turned out dynamite.

Here's another tip ---  After you take it out of the smoker, put the whole batch uncovered on a big plate  and leave it in the fridge for about a day to cool fast, dehydrate, and firm more before vacuum packing.  But, I doubt there will be anything left to package.

A couple sticks of Indian Candy is great energy food to pack when fishing.  It should be enough to fuel you all the way to Dux to catch another salmon to smoke.   :smt003
