I was in the Santa Cruz West Marine the other day and they had a couple of pedal kayak brands on display---one Native and one Old Town. I'd never seen either one up close, and both look pretty cool. That Native pedal drive is certainly impressive, but it could double as a boat anchor. Anyways, it might be worth a look-see if you are in the neighborhood.
