Like other's have said, Kauai weather is hit and miss , you can count on the wind to come up @ 11 am and you have to pick the side of the island with least swell. There are a few guys on Aquahunters forum that fish Kauai.
Hanalei river is a nice relaxing paddle and we like to paddle out the river mouth into the bay.
I would take extra caution going out fishing without someone who knows the area. People die on Kauai every year. Tunnels is great snorkeling....but beware of the currents if the swell is up.

If you decide to go the charter route , another good boat is Hawaiian style fishing in Kapaa. Capt. Terry is a great guy and will put you on the fish. He has a great 25ft Radon and launches out of the river in Kapaa, a adventure in its self !

The Kauai coastal bike path is another awesome thing to spend the day on. Coconut coaters in Kapaa rents bikes right next to the path, eventually 16 miles ea way. You go @ 4 miles North now past Donkey beach,  a few miles South right now,great picture taking spots along there.

We're on Kauai at the moment until the end of Feb. It's been crazy out on the water with wind gusts hitting 80mph and wave heights reaching 35'.
Two days ago 5 main landers had to be rescued after being swept out of the channel on the north shore at Anini Beach. All turned out ok, not to much worse for wear.
Also 37, no kidding, 37 hikers had to be rescued in one day from the Na Pali coast hiking trail after small creeks were turned into raging torrents from flash floods.
Be carefull, know what your getting into.
I hear that if you try to rent kayaks a lot of companies will not rent to you if they think your going to take the boat into the ocean. Probably due to insurance reasons. I've been watching kayak fishers here but I think their locals.
As far as kayaking the Na Pali coast, it's limited to a small window of time in the summer. That's when the seas are most cooperative, but still there's no guarantee, ask Chadrock. Plus you need to apply for all of your permits way in advance, as much as 6 months is suggested. Try reading 'The Ultimate Guide to Kauai' for loads of info, guide services, hiking trail routes etc. Also try reading 'Paddling Kauai' by Audry Sutherland, this one's almost a must. Again, know what your getting into. We've already heard lots of tales of kayaks and local fishermen who went out toward Na Pali and were never seen again. They say that the military has radar stations at the tops of that mountain range that can detect a bottle floating in the ocean but when ever there's a missing fishing boat they can't seem to find that. Go figure.
This place is beautiful but it does have it's share of dangers.

Sorry I missed this thread before!  Took my wife there for our honeymoon back in October '11.  If you're not hip to them yet, check out Mark White lures (http://www.markwhitelures.com/).  One of the main reasons I took my wife to Kauai was because of the smallmouth fishing I heard of in the upper reaches of the Wailua on down.  Many of the places required heavy hiking and exploration, but that was part of the fun.  The lures Mark White makes have caught dam near every species I usually target.  The black 1/4 oz. is surprisingly good at grabbing catfish, and I have no idea why.  But the smallmouth fishing was awesome on extra light gear - talking 2# and a teeny tiny rod.  Fly fished many of the beaches and caught all kinds of odd looking fish.  We stayed in Wainiha at a house we rented.  If you want to fish, you really can't beat Kauai or Oahu as both have inland waters as well as, well, the oceanic ocean all the f around you,...all the time. 

Now I wanna go back.
